Housed in the factory of a 19th century henequen hacienda, Ixi’im restaurant celebrates the vibrant flavors of the Yucatán. Chef Luis Ronzón crafts each dish with a deep appreciation for local ingredients and traditions.
Ixi'im is open from Tuesday to Sunday, from 1 p.m.

Vallejo and Ronzón designed Ixi'im under the premise of embracing local traditions with a focus on sustainability.

LUIS RONZÓN
Luis Ronzón's culinary path began under the mentorship of Chef Yuri de Gortari and as an apprentice to René Redzepi at Noma, experiences that shaped his talent before leading him to Quintonil. Captivated by ancient techniques and the mysticism of Mayan culture, he joined Chablé Yucatán — a partnership that began in 2016.
His latest honors include One Knife at The Best Chef Awards 2023 and "Chef Revelación" at the Food and Travel Reader Awards 2023.
JORGE VALLEJO
Jorge Vallejo continues to scale the ranks of The World's 50 Best Restaurants for his acclaimed restaurant, Quintonil in Mexico City. In 2024, he was honored with two MICHELIN Stars for his exceptional work.
The gastronomic concept at Chablé Yucatán is a product of Vallejo's unparalleled expertise and creative vision, which has solidified his reputation as one of the most influential chefs of his generation.
