At the helm of the kitchen at Ixi’im, Chef Luis Ronzón reinterprets the gastronomic heritage of the Yucatán Peninsula with a unique sensibility that leaves a lasting impression. With impeccable technique, he draws upon ingredients grown in the property’s ka’anchés — our traditional Mayan gardens — alongside culinary knowledge that has shaped this region for generations, creating distinctive expressions that engage every sense. Thanks to his fresh and forward-thinking culinary vision, Ronzón was named Revelation Chef at the Food and Travel Reader Awards. More recently, he was awarded Two Knives by The Best Chef Awards 2025, a distinction that further cements his presence on the international gastronomic stage.
